Smoked alot of thing but never a lamb...I'm excited!!!!!

When I cold smoke cheese and package it, I wipe any moisture off with a paper towel.
Then I place it in sandwich bags and roll the bag up before I seal it to get as much air out as possible.
I've never had mold...knock on wood!
