    What's your occupation?

When you're retired, the days are either weekdays (less traffic and fewer people in the stores and all the stores are open) or weekend days (more traffic and stores are mobbed and some aren't open). It's kind of weird to actually look forward to weekdays.

I like that control panel. Pretty cool pics.

You won't know until you try it. I thinks it better to know that you have a daunting task ahead of you, but it sounds like you already did. I'm sure you can keep the cost down some by increasing the amount of time you devote to it. You just have to be willing to do that. Cutting it apart with a...

Did the little blue box also contain a button that says "Upload Files"? If so, you have to click on that to get to the files on your computer.

    my shrimp

I've tried smoking shrimp twice this way and they seemed limp and maybe slightly undercooked (not unsafe) both times. I'm going to bump the heat up next time. The shrimp I used were thawed and slightly mushy in texture when raw, the best I can get locally. I used alder the first time and apple...

I'd rather explore why you could not make it work, so that you'll be able to in the future. When I click on the photo upload button, it looks like this I click on the gray "Upload Files" button on the top, find the photos on my computer, select them, select the size to upload, and they upload.

Well, first thing we need to know is whether you are using a computer or a mobile device. They have similar browsers, but not exactly the same. If you're using a computer and if you click on "Quote" or "Reply" at the bottom of a post that you are replying to, it takes you to a text box with...

Putting pork shoulder in a cooler with towels???

The towels are insurance against clowns who would walk up looking for a beer in the cooler. When they see the towels, they close the lid and try another cooler. Otherwise, when they see the foil wrapped butts, they touch them and make butt jokes. Please tell me that I'm not the only one who has...

Putting pork shoulder in a cooler with towels???

The time in the cooler is called resting. The meat continues cooking after pulling the roast from the smoker. The towels and the cooler are insulation, to help keep the meat temp high while the colagen turns to gel. I rested butts in a cooler with towels for over five hours and the internal temp...

    Commercial fridge build.

I just bought painted metal roofing to cover over my deck when the tarp that I've been using succumbed to a hailstorm. It looks like it would be a good metal for inside a smoker. It cuts easily enough with a circular saw and it has ridges every nine inches that could be used for racks. Adding a...

    Commercial fridge build.

If you get one old enough, it will have fiberglass or rock wool insulation instead of foam insulation. Those are naturally fire resistant and neither melt nor degrade from heat. Some also have some paper type insulation in the doors. If it has fiberglass insulation, it can be "glued" to the...

I would be curious about how you could get a hot wire down the back, especially if there is anything it would catch on. But if you can do it in a well ventilated fire safe area, you might be able to just heat the metal lining enough to melt the insulation. I think an electric "heat gun" paint...

What do you who went to electric from wood think?

I went from a modified ECB to an electric oven conversion and I won't look back. The ECB was so frustrating that I gave up on smoking and told my wife that I wasn't interested. Then we saw Alton Brown's cardboard box salmon smoking episode and she started talking about getting a decent smoker. A...

    my new smoker

Cast iron is actually not good for spreading the heat. You will have a hot spot in the pan right above the hot spot in the element, and it will take quite a while for the heat to spread to the rest of the pan. Aluminum is better for spreading the heat, but easier to burn up. That's why I went...
