    I had the upper grate in that was the first thing I looked at. Thinking to myself what a rookie move lol. Both my grates have handles but one is smaller then the other for sure. This happened due to the bounce of 9 lbs of meat on the grate and perfect timing of the slight push CIA my hands...

    Well my second cook had a disastrous moment. I was putting a pork butt on the grill and I must have dropped it then pushed to one side. The top grate moved from its position and tipped. The butt crashed down into the water pan, which then tip as well letting the butt fall down into the coals. So...

    First cook. Side ribs. Got the vents choked back all the way and she is still at 250. Windy as a bugger here though.

    I also preheat mine actually to 330f the hotest it will go. Once I put food in the smoker the temp drops down by like 100 deg even more some times. Maybe one to one and half hour to get back to 240f. I have changed out the element twice now. Could be one of those lemons you know. It still works...

    I hear ya. The issue I have is it gets up to 330f but when I put meat in it drops like a rock (which the temp should go down) and takes for ever to come back. My meat I leave out for about an hour to warm up also.  When I put water in i only use water that has come to a rolling boil. Maybe this...
