To Wrap or not to wrap

I'm just a n00b but I don't like the foil wrap idea, at least not while you're on the grill. I used to make "Tony Roma" style ribs for my ex-wife, she liked that falling-off-the-bone tenderness. I like to gnaw on the ribs.

    Cleaning Smoker Racks

I remember trying to clean the grates on my range top. I even tried clamping on my workbench and hitting them with a conical wire brush in a power drill -- nada. THEN I hit up on the idea of putting the @#(*@# things in the oven on the "SELF-CLEAN" cycle -- worked great!!!!!

Clever way to cook and serve hot dogs on the grill

Find some decent hot dogs and a bamboo skewer. Thread the skewer long ways through the hot dog, then, with  a sharp knife and on a cutting board cut AWAY from yourself at a 45 degree angle. Remove the skewer -- spiral cut hot dogs! Heck of a lot more surface area. If you've got some...

    4th of July suggestions

You removed the dreaded silver skin, yes? I managed to incinerate a rack of ribs learning how NOT to do things. A month ago I finally took the plunge (minor plunge) and bought a "Smokenator 1000" which is essentially a baffle with a water reservoir -- works GREAT! No more campfire meals for me...

    Ain't it preeeeety!

Great tools. Not cheap, but I noticed that my cooking and baking improved quite a bit when I finally coughed up some dough for proper instrumentation! And a digital scale for weighing ingredients!!

    Who else stacks?

Good use of resources!  I've got a not great photo of a Cub Scout event, I was doing a demonstration of Dutch Oven cooking. Brownies in the 12" Lodge on the bottom (inverted pie pan inside the DO, a baking pan on top of that holding the brownies), enchiladas in the 10" Lodge on top of that, and...

Sirloin tip roast Weber 22.5/Smokenator 1000

Here's the final product. Began with a nice piece of meat from Bisher's, our local good butcher. I picked up some rub for beef at Bisher's also, and took it easy since last week's experience using an 'Emeril' rub was a bit salty. Just starting out. About 3 hours in I put a handful of whole...

    ELK

A couple-five years back when there was a scare over crappy pet food ingredients I bought a "Tasin TS-108" grinder it's impressive, it'll even grind chicken bones for a pet diet. Makes great burgers (half chuck and half lamb)! Highly recommended. But if you happen to find a KitchenAid pasta...

Inaugurated my "Smokenator 1000" yesterday. Very pleased! Dedicated griller with my Weber 22.5" and Weber 18.5", before that I used (this is true) a little cast iron hibachi. Which I have to laugh about at this time. I moved to the suburbs and what could be more suburban than a Weber kettle...
