Beautiful Fatty and a great learning lesson! Sausage normally will get firm when cooked. Bet you can't wait to expound on the many different concoctions your mind can imagine. MMMM-MMMMM!
Nothing like Oakie engineering. Nice job. Your smoker is coming along well. And if it continues along this path I can already see one fine cooking machine.
Just when I thought I was done.....Hate the water tank set up. Had an 84 gallon aluminum tank built. Got it installed today. Will take picture of it tomorrow and post. Some of the best money I've spent yet.
I agree with Len. Fire that puppy up before you paint. Try her out. Only thing you lose is a day. You may just find it does what it's supposed to and you are worrying for nothing. 20% is not that much.
My firebox is calculator size and way easy. I would be tempted to tell you try and see. The person who really knows is Ribwizzard. Try private messaging him and see what he says.
My brother owns a butcher shop. Beef is up because American supply is as low as it was in 1955. Mostly due to drought. Pork is up because the virus pigs have been getting (diahrea that has been killing piglets) has reduced herds by 10+%. Thanks to America demanding cheaper prices and...
I insulated my box. I think it helps conserve fuel. Box still gets hot though. I did not do a plenthum box. Didn't even know what one was. I like mine right out of top of tank. Haven't ever had a problem with it. I did stick it 6" into tank to help hold heat. Good luck with your build...
Time for my 2 Cents worth. Hire an electrician to put a plug in for you. The worry and hassle you save will be worth every penny. Not doing that is like spending a dollar to save a dime.
Research, research, research! I can't tell you how many times I have read a post where something has...
I promised a video of my smoker and have been lax, yesterday I finally took this video for you guys. I just figured out how to get it from my phone to here. Hope you like it.

My 2 cents worth. I don't think a door can be kept flat without some kind of stiffener. I welded stiffeners on my doors but my door wall was only 1/4" plate and it warped something terrible. I used "C" clamps and 1/4" angle to straighten it back out. Haven't had a problem since. Rib is...
There's a new carbide blade for a skillsaw that will cut 3/8" steel with no problem. Harbor Freight. I cut both of my propane tanks. Straight and clean cuts. FYI Blade is $20 Harbor freight, $50 Lowes. I've bought both and they perform exactly alike.
Nice job so far
