    questions on casings

Nope, but I would!!  I am eager to see someone use super skinny collagens succesfully first though. My racks are wide, so I need the casings to hang on racks.

    Cure

Debi, you rock!! Great info. Better yet, get a good reliable source book (Rytek Kutas, Charcuterie, etc) and follow the instructions to a T.  There are entire chapters dedicated to why cure, how much, when, etc.  Education is critical. As someone just starting out who wants to go beyond the...

    Christmas Prime Rib

This right here was going to be my EXACT suggestion. Give the gift of food *AND* you'll always have a way to do more stuff there and ready for you for future Family Gatherings.  I would LOVE that!! Having never done what you are wanting to do, I cannot comment on taste. :( I do not want to...

    questions on casings

If they are still packed in the salt (and you've only been pulling out as much as you need and resealing) what would make you throw the rest away? I've never had a packet last very long (fresh kielbasa keeps very nicely in the freezer) so i would not personally know.  Is there a food safety concern?

    questions on casings

I have not used MidWesterns 16mm collagens. But... I got a friend who used another companies tiny/skinny collagens for snacksticks. It could have been the recipie, but the expected normal shrink shrank too much and they looked really really weird. (This being a family friendly forum, I will not...

I kinda didn't tell my husband until after. ;) Sometimes it is easier to beg forgiveness than ask permission!!

Bearcarver recipe - My smoke w/Qview

I use skins, and the Bearcarver does not, so I can cold shower mine by placing them in a ... COLD SHOWER! No, really. Hang them on waterproof sticks, and hit 'em with the spray till the internal drops to 90* or less.  This does two things: One: Helps reduce shrinkage Two: Brings the meat to a...

    questions on casings

$.02 ... I use natural Hog Casings for bratwurst and emulsified sausage (frankfurters)  I prefer to get them liquid-pack, right from my butcher. I do enough business with him that five-or-ten feet of casing is often gratis when I pick up my pork or beef order.  Barring that, I can buy 50 feet...

Care And Feeding of a 5lb Grizzly Stuffer -15 Pics QView -Good for Rookies

Aww... thank you for the compliment!! I am not kidding when I say that I can stuff as fast as I can turn the crank. If I have a fully loaded stuffer horn (I can easily fit five feet of natural casing soaked on there, that's five pounds.) I can spin them out in under two minutes. If I am doing...

    cleaning meat equipment question

Food grade lubricant comes in two types, generally: Tube, squeezes out like gooey toothpaste, and spray. (Look for the NSF logo, if you can. http://www.nsf.org/) The spray is "easier" to use, but I like the hands on cleaning I get by using my nylon bristle brush and making sure I get into every...
