Teeroy, everything looks great! Nice qviews. I also did a loin today (no pics) I made a white bbq sauce and the wife said it was the best she has had. It was great.
I wrap the butts at 175" and put in oven in a roaster at 250" for one hour. I then wrap in an heavy towel and place in a cooler for up to 4 hours. I have never had any compaints. I always use mustard and my own rub. Everything else sounds just like you said (cider vinegar and juice).
Thanks everybody. The cake pan was jeff's idea. The loafs were real good the glaze was just bbq sauce. The abt's were just a little to hot for me, I also did a couple with sweet peppers instead of japs and the wife really liked those.

I have had the plateau problem before and most of the time I turn the temp up untill the meat starts to heat up. The juiciest and most tender butt that I have done.
