smoking 4 Roasting Chickens and beef roast. I got ahold of a spice today bacon spice. i think it would be great in summer sausage I will try it and let you know.

I took the stems out of the mushrooms sprinkled the inside with garlic powder then added spicey sausage wrapped in bacon I put them on a coookie sheet and smoked for about an hour and a half. (just a guess at the time i didnt pay much...
Ok I will add the pics i think they were in too long the skin split a little. but the smokey bacon wrapped sausage stuffed mushrooms came out really good.

ok I gonna give it a try got the smoker heating up, a pan of hickory chips is getting warm in there. IF they turn out I will ad qview, (if not , if there are no pics it didnt happen) Ok qview added from a little push froom BBQ Engineer.
Wow I learned some thing new again in here, I did not know about cleaning the underside of the fridge. I just got out the industrial vac and opened the front underside of ours it was not clean but it is now thanks for the info.
Welcome to SMF. Hope you enjoy the time you spend here and learn lots. btw, get yourself a different thermometer a probe type digital. My Smoke Hollow was off by over 62°.
