OK Joe Highland Horizontal versus Brinkmann Trailmaster Vertical Offset Smokers

Well that bottle of silicone you have there looks to be the exact same bottle I found at Lowe's, bought 2 for $5 a piece.  Is that roll the Black Nomex? I think I'll shop around some hardware stores to see if I can find similar stuff at a cheaper price before I order from bbqgaskets.

OK Joe Highland Horizontal versus Brinkmann Trailmaster Vertical Offset Smokers

Alright, so a little update.. I got impatient and did a couple cooks in the smoker after curing it to see how it'd turn out.  The upside, my burgers, ribs, and pork chops that were all done turned out great!  The downside.. I fought that temperate like hell to get it steady.. Granted, it didn't...

Divisional Round Playoff Weekend Babybacks & ABT's !!!!

Looking great!! I did some baby backs as well today, along with pork chops (had some haters on ribs) and twice smoked taters.  Wish I could upload pics, but limited internet at home.  Will have to upload all of my cookings when I return to school next week.   The Pats/Ravens game was great...

What woods have you tried and DON'T like

I just received an offset smoker for Christmas and am new to using chunks of wood for smoking, but I've tried several bags of chipped wood with my MES before I got my AMNPS for it.  My favorite combo is pecan and cherry, the smell alone is so GOOD, but I use hickory a lot to.   Now I have to...

    Freshwater Fish

I love, love, LOVE catfish, ESPECIALLY Flatheads.  Crappie is probably my #2 but close tie with the cats.  This is probably because i've grown up by the Mississippi River and grandpa loves to fish catfish - not so much bass/crappie.  I guess I don't really taste the fishy ness as much as some...

iGrill 2 is in Da House!

I tested the distance on mine last night, I even pulled out my range finder to see where I could walk around my house before I lost range.    I wasn't as lucky as you though, it's about 50 yards to our barn, and I could walk to the holding pens which were 77 yards, but once I stepped into the...

iGrill 2 is in Da House!

I got one for Christmas and I love it!!! So far I've done a turkey in my MES on Christmas, and I've used it for checking the temps while curing my new smoker.  I love being able to have the temp on my phone, and being able to set a range temp, and even sharing it with everyone!   My only...

OK Joe Highland Horizontal versus Brinkmann Trailmaster Vertical Offset Smokers

That's quite the fire there! And a lovely full smoker! lol I may research some more on charcoals once I get things figured out.  For now I just went up town to the local store and bought a 16 lb bag of kingsford, that'll get the job done this weekend.  Got distracted by a lot of things today...

OK Joe Highland Horizontal versus Brinkmann Trailmaster Vertical Offset Smokers

So you do not recommend using any type of oil to rub down the smoker?  I am hopeful to get it fired up today, because it is suppose to be the last warm day for a very long time lol..

OK Joe Highland Horizontal versus Brinkmann Trailmaster Vertical Offset Smokers

Thanks for the advice!  We bought some high temp stove sealant for my MES at Thanksgiving, I can't remember the name of it offhand.  Maybe that will work for what you said.  I will look into it tomorrow and get back to you.  Also, when you say start off slow, how much charcoal would you use?  I...

OK Joe Highland Horizontal versus Brinkmann Trailmaster Vertical Offset Smokers

My grandparents' cousins happened to bring those in back at Thanksgiving time, they use them to cook jerky in the oven! Those are pretty neat racks, and can be found fairly cheap.  We first saw them on Cabela's website, but after doing some searching around they were much much cheaper everywhere...

OK Joe Highland Horizontal versus Brinkmann Trailmaster Vertical Offset Smokers

Well everyone judgement day is upon us!  Christmas morning has come and gone, and I am the proud owner of a new Brinkman Trailmaster vertical offset!!  I am so excited and thankful for my family!  I spent the day on and off putting it together.  Tomorrow I will rub it down in vege oil and season...

    McCormick Smokehouse Maple - recipe?

I just used McCormick's smokehouse maple and bbq rubs on some burgers I smoked yesterday.  Huge fan of all the McCormick rubs.  Good luck on trying to recreate it.  Let us know how it goes!

    Grilled chili Cheese Sandwee!!!

Mmm... You know, after our "social gatherings" in this college town, we like to stop by and pick up a grilled cheese mac'n cheese with bacon sandwich at a donut truck set up out back.  Adding chili to that just sounds really good right now...

    Canning smoked fish

Wow that looks really good!  My grandparents have a large garden where we can over 60 quarts of tomato juice, and other vegetables and even some sausage before.. But have never tried fish! May have to take note for future reference..

OK Joe Highland Horizontal versus Brinkmann Trailmaster Vertical Offset Smokers

I have an AMNPS for my MES analog, am curious to see how it would work in either - considering the amount of smoke it's able to put off.   That was my thoughts on the vertical.  Air flow is more natural per say, and potentially less modifications that may be needed for the smoker to work at an...

Leftover turkey meat mixed up into some hash... And the hambone put in a pot of beans.  Leftovers are almost better than the meal itself.

Some good ole' egg noodles and deviled eggs... Perhaps for the potato salad - I'll try twice smoked taters .
