    With this particular cook being a pork butt I did use a large pan (I think it was for turkey) but after it finished cooking I transferred it to a medium pan that would fit in my fridge.. Until I came home, warmed it up, and pulled it.

That's exactly true and I learned that firsthand on this butt haha.  I stuck a couple forks into it when it was cold and didn't even bother.  Heated it up in the oven for 30 minutes or so with some liquid in the pan was the ticket.  Not too hot but definitely warm enough to pull...
