Call some cabinet shops in your area. Im a woodworker and we throw away tons of scrap wood. Theres usually alot of alder, oak, maple and cherry. Its free too.
I think the deer liver is sweeter than elk. The bacon seemed to tame the liver taste even though I dont mind it. Im considering doing a liver and onion fatty.
I wrapped up some elk liver, no spice with some bacon and smoked it with some maple. It came out quite good. I lost my camera or I would have taken a few Qviews. Next time.
I am a newbie to the forum but Ive been smoking for a few years. Ive never tried smoking deer or elk steaks, and I was looking for some recipes to use. Freezers full and bellys empty so dont hold back. I always thought they were too lean to smoke.
How about coring them out and stuffing them with cheese and some peppers? Even leaving the seeds and slicing halfway through and stuffing that sounds good.
