That sounds good. I think I rushed the ribs the first time. I know what I did wrong now, I didn't smoke to the appropriate tenderness. I'm going to try a 3-2-1 method my next go round with the ribs. My kids love fall off-the-bone ribs so I think that will give us the results they are looking...

I picked up a pork butt from save-a-lot today. It is a little over 3lbs. This will be my 2nd run on the smoker. I've watched many YouTube videos on smoking butt. Some apply a rub on naked meat, some use a binder like yellow mustard or olive oil, then apply their rubs.

I did not temp them, but I did do the bend test. When picking them up in the middle they did bend down at the ends, with a wide U defintely did not bend into a ^ .
They cooked in total for about 5 hours @ 270°-275°. They seemed to be fork tender when I removed from the smoker. I wrapped them in foil after I removed from smoker and let them rest.

I watched a YouTube video where a guy takes the 2 sear plates that are provided for the firebox and turned them into baffles. He takes them and wrapped them in heavy duty foil. He then shows the temp with them in place and without and he holds temp with only a 1 degree difference.
