Nice work chief. Yeah, I find that when I use the cider finishing sauce (got the recipe here, it seems to be used almost universally) I don't want any BBQ sauce, and guests often don't either.
I keep my MES in the basement (my house is a walkout ranch) and when I want to use it I carry it outside and put it on the patio directly on the ground.
I have had no issues at all with my 2nd gen MES (purchased this August) and have used it 6 or 7 times so far.
Having said that, I have not actually measured the ambient temp in it so far and compared it to the digital readout temp, so I don't know how accurate the thermo is in it... and a lot...
I agree with the others... you cannot do an overnight smoke with this unit as-is out of the box unless you just want to slow roast your meat with minimal to no smoke flavor, unfortunately.
I actually have the Masterbuilt cold smoker attachment for the MES 30" and have only used it once so far...

In the Louisville area it seems pretty much just like KC to me, with the exception of a local chain with terrible Q (Mark's Feed Store) that for some reason has a mustard-based sauce.
I have been to Owensboro and had mutton BBQ but that seemed like KC with a different meat...
Howdy. I live in Spencer County and I cook on an MES 30" (2nd gen, with the controls on the front). I also have an old Brinkmann charcoal smoker but I haven't used it in forever and when I do I just grill on it.
