    Hi-Speed Brisket - long & tons of Pron

    Great explanation on the Hi-Speed method. I will have to give it a try. I've been doing them low and slow taking 12-16 hours to smoke. This will save a bunch of time. The only problem I have is keeping the temps that high. My Mes will only go to 275 and my SnP will do it but with a lot of tending.

    I say go with the PP and beans too. Maybe throw in a ham they are usually on sale. Briskets are good but a little more expensive and take longer to smoke.
