I'd fold the point under itself until the brisket starts to shrink up. If it won't you will have to separate the point and flat.

As far as the wood chips are concerned I think you are on the right track. Fill it up though and maybe add a few more after a couple of hours and that's it.

You don't have to mod it at all frankly. I had one for several years and still wood be if I hadn't accidentally set the propane hose on fire...
The needle valve mod done on other LP smokers may be something to consider though.

I started out on the same smoker. It will do you well.
Remember to go by temp not time. Its easier to start early finish early and wrap in foil and then a towel plop it in a dry cooler and fill with towels to keep warm... so start about 2-3 hours before you need to...
I think this is a viable option for a go to rub but would be hesitant to say that everyone should stop experimenting. That would break the spirit of what this forum is all about.

Very cool! I didn't do that on mine because I don't have any self control so I'd use that card like a tornado in a trailer park. Such a good deal though for folks looking to get a new smoker and can junk the credit card afterwards.
I have 2 WSM 18.5". If you are a tinkerer then you can mod the living daylights out of the WSM. If you have no desire to do any mods then the WSM will be perfect too.
As Johnny mentioned above, they just work. There is a learning curve with all new equipment but that's what we're here for...

The way I've very quickly come to think about my MES 40" is an oven with a smoke attachment.
It's so simple to use that there's nothing I wouldn't try right off. To get your feet wet a chicken would be a good way to go but I'd jump in with what you want to smoke and eat not...
Had a little trouble keeping the AMNPS maple pellets lit tonight. I had frozen packs of ice to keep the temp down and that dripped on it. Then I don't think I had enough air.
Only got a few hours of smoke but got some decent color.
I think I should have dried out the pellets again or used...
Soaking for an hour or so did the trick. Dried well by blotting with paper towels and into the fridge until tomorrow.
