Problems with my new WSM 18.5

I've never heard of having water in the charcoal pan in the ashes except with condensation, spilling or leaving it out in the rain.  If it has been really humid then condensation is your answer.  As long as you empty all the ash and water out and let it dry you'll be fine. As Pops said the...

first run on my 18.5 WSM

Leaks are not an issue with the WSM. Edit:  The WSM is not meant to be airtight.  Leaks will not affect the operation of the smoker.  However if the round is not true on the lid or body you may have excessive leaking and you'll want to contact Weber: http://help.weber.com/ It will take...

    My Boston Butts take 3+ hours per pound @ 210-240 F.... ?

I don't think its the smoker necessarily. I'm on hour 13 for a 5lbs butt. I finally put it in the oven. Its killing me today. A lot has to do with how the meat has been cut. Sent from my Galaxy Nexus using Tapatalk 2

It looks like I have a problem...

kingt36 can you get some pictures of what you are seeing? Either the regulator is bad or the propane tank isn't open all the way or is running low. Is this your first cook with this smoker?  If so I'd seriously consider taking it back and getting a replacement.  I never had this problem on my...

    Smoker's database.

Grampa that's a cool looking DB.  If I had a Mac I'd jump all over it. Here's a tutorial on adding pics: http://www.smokingmeatforums.com/a/graphics-of-posting-a-pic-in-a-post

    Probably a stupid question....

The other option would be to use the minion method. http://www.smokingmeatforums.com/a/minion-method-explained-with-tutorial http://www.smokingmeatforums.com/a/minion-method That's what I use on my WSMs.  It works well but you'll still have to add coals towards the end if its a long cook...

MES 40 + AMNPS + Pork Shoulder Roast (QView)

We're just 3 hours in and the brisket flat is reading 140°F already.  Things are looking really good.  I'll take some pictures here in a little bit.  Still have TBS and 1 of 2 rows that I filled in the AMNPS is left. Hopefully getting the ribs on in a few hours too.
