Ive had that happen to me before. I smoked 3 different racks all same method. One of the racks was bought in a pre-package (if you will). It was "enhanced" with god knows what. After I pulled the racks this rack came out as you described. The other 2 that I got from the butcher were great.
I got the brinkmann with the offset fire box. what mods can be done to retain heat? Im pretty new to smoking. Can you build a small fire in the box for the smoke and put some charcoal on one side of the cooking chamber and cook the meat on the other?
how did Jeffs rub taste on the brisket? I'm wanting to buy it but having a hard time bringing myself to spend 14$(Ecourse) on a recipe that I don't know if its worth it or not.

Tomorrow will be my 1st attempt at a pork butt. I have 2 picnics, going to try to different rubs and sauces on them. ill post some pics tomorrow.
