Camp Chef 24" Smoke Vault Review

I replaced my old masterbuilt smoker with this guy.  I am so far very impressed.  As far as propane smokers go, I really can't complain. Pros. 1)  Size.  It is very wide, so you can lay a lot of meat side by side with easy access.  This is nice compared to my backwoods which is far deeper but...

    New Backwoods Party

All right, so I got my new backwoods party and finally have a few smokes under it to review properly.  For record, my previous (and only) baby before was a masterbuilt pro which I did enjoy. Pros: 1) I literally love this thing.  It holds temps incredibly.  I was very nervous about using...

    Smoked Corned Beef This Weekend

All right, so everything turned out very good.  The corned beef was fantastic.  I cooked it uncovered for 2 hours with a simple salt-pepper-garlic rub, then cooked it in a pan with water for the remainder.  Below left is the unopened corned beef.  I washed it off thoroughly with water and...

wow!  that skin already looks pretty crispy from the smoker alone!  What was the brine recipe you used?  How did you dry them in the fridge?

    Smoked Wings Plan

Thanks.  Marinading in the italian dressing definitely kept them moist.  I don't know how much they really needed to go on the grill, they were pretty crispy from the smoker!

    Smoked Wings Plan

Alright- sorry for the delay.  They literally were the best wings I have ever had.  Smoked for 2.5 hours then sauced with Thai Chili and put them on the grill for 5 minutes each side (not sure if that was really necessary).  They were amazingly tender and flavorful.  Also did a pork shoulder and...
