On Black Friday I smoked some ribs (12.5 lbs) for our Canadian visitors that we had over the Thanksgiving weekend.
Above - Loading the rib rack. I used Jeff's rub that a friend gave me for my birthday.
Going into the smoker.
The money shot. No sauce was used on them but was offered on...
UPDATE: A friend picked up the smoker today (10/25/11) and the first thing he pointed out was the lid was not sprung....it wasn't fitting properly all the lid needed was a hand grinder to remove a tiny amount of steel in two places and then the door would be fine. I had sprayed the lid hinges...
Thought I would let all know that I bought the smoker for $20.00. Will be talking to someone that has the experience/expertise and equipment to make the needed changes. I will let him have the unit all winter to work on.
The cost is less than $50.00. I will meet with someone that builds/works on them tomarrow. I see what he says and then let everyone here know his thoughts.

My second smoke yesterday (7/23/2011), I started around 10:30 AM, using cherry wood and a rub the DW (Darling Wife) picked up. The outside temp was 93.3 degrees when I started. I put on 2 - 4lb pork loins and maintained internal cooking temp in the smoker at 225 to 240 degrees, (even at that...
