    I agree on the lower tempature. I always just use the taste test. Pick one of the larger piece and cut it open in the middle to check.

    New Years NFL Sunday

    Very nice. This was a razer clam dig weekend for us so we had some fresh fried clams and picked up some fresh oysters. I let them do the shucking this time as I already had enoght going on this weekend so it is a shooter weekend. Most times we get the special 5 dozen for $20 - great deal.  Sorry...

    Winter-time No-Smoking Meat Blues

    I see old refrigerators in the free section of craigslist all the time.  I got a great working fridge and another that works great drilled out for a kegarator. I use them both. Working ones are less common but non working are plentiful.

    Thanks, I did get the largest cutting board I could find and thought about either cutting it out of having the pig laser engraved.

    Smoker is filling up

     Here is my first Fatty. Had trouble with the first roll with the sausage sticking to the wax paper. I thought I was goung to end up with a scramble but my wife helped save it and it turned out pretty good if I say so myself! I'll drink that beer during the smoke. Jerky is strung and ready...

    Looking for a Pig cutting board

    Looking for a good sized pig shaped cutting board to make a perpetual trophy for the annual family cook off. Anybody know where to find one? The only one I have seen so far is a smaller Paula Dean one from Walmart.com
