I agree on the clean smoke comment, but when the logs burn, the temp gets out of control. Charcoal and smoldering logs can maintain about 200 degrees, burning logs throws the temps to 500+.

He is a pic of my old rusty smoker.
It works great and is seasoned so well, that you just walk around the corner and you can smell it, even when its not being used.
The wheels are broke, its rusty and ugly.
I am not trying to win any beauty pagents with it, so I leave it as is.

Well, here I am again, trying to get the final recipe set for our Luau next week.
I am doing some pineapple / soy pork and just a basic pork rub.
Trying it in small batches so I can see what does not suck.
Anyone who has a good recipe for some hawaiian pinapple pork, please share...

I tried a terryaki, ginger and garlic marinade. I bought the terriyaki, which I think was the first mistake.
I should have made it myself.
I did not use any salt in addition to what I did.
There is no such thing as too smokey for me..
