Here is my Salmon brine.
2 Gallons of Water,
2 C Kosher or Non-Iodized Salt
1 C Dark Brown Sugar
4 T Granulated or Minced Garlic
2 T black pepper

Coated the ribs with Lemon Pepper rub, and put real good dose of lemon juice in the water that I had in the GSM.
Crusty outside, juicy and tender inside.
You can smell the lemon in the smoke!
Used charcoal and 3 chunks of Hickory.
Pretty darn good!
