never heard of a tommy burger either here in kentucky.
good color on those cheeses.....should be pretty tasty......its hard to wait....but ive tried it fresh out of smoker, and a day or two later....just to see, and then a few weeks later...big difference.
wow...that is huge....lol. bet there is some history to that smoker.....how did you come about obtaining it?

for me....i have to go with the process as well, and watching the reaction on peoples faces when its better than they expected. i like getting those phone calls...."what ya cooking for the game this weekend?" i love waking up on a saturday, pulling a slab of some kind...

i too usually trim the fat....but not all off, it keeps that baby moist. looks like ya got it down, a brisket is a patient smoke....just keep that temp down and a beer in your hand, and it will be perfect.
