    Thanks I will try that rub with this method one of these weekends when I get some time. I am sure I will like lamb just never had it growing up and didn't have the slightest clue how to prepare it.

    Looks like a good start, as far as the questions I can't help too much.   I do have a concern on the size of the bungs I don't know if they will give you enough flow for sure. I would plug the numbers into the calculator and it should give you an idea of how long of a stack you would need using...

    Congrats on your new cooker. I don't have a lang but do use a stick burner and a big key is to open it up and let it breath. They like to have a good volume of air moving through them, keep a small intense fire going at all times, pre heat the wood and you will enjoy TBS.

    I am the same way I set a pretty ambitious goal of Memorial weekend to have my trailer built and the cooker set on it (built the cooker last year) so that I can pull it to a dealer appreciation meeting we are having at work for the guys that sell our trailers.

    As Promised...

    Sounds like you are going to have a heck of a rig when all is said and done. It has taken me almost 2 years to finish mine out but I am hoping by the end of the month I will finally have my trailer done so I can put my cooker on it and have it be mobile finally.

    To trim or not trim fat?

    I have done both and find myself not trimming more often then not. They stay real moist, you can get rid of the fat after your cook it, add flavor some people like a little bit of the rendered down fat on their beef and its just plain easier.

    Couple pits

    Thanks it only took me 2 years to get it this far from when I first got the tank but its been a heck of a learning experience. There are a few things I am going to go back and fix on the cooker but they are very very minor things that I didn't learn about until being on here more.
