    I'm guessing it is an old freezer with a fiberglass cloth like insulation?  How wet did it get?  Arethere any vent holes for air to get in to the insulation?

    Good luck with the next batch, I have never used Tender Quik, i prefer to use instacure #1 for all my sausage.  I make a couple hundred pounds a year and never a problem.  Make sure if you have questions to ask, there is a vast amount of knowledge here to help you out.  Good luck

    So instacure #1 could be used for curing a turkey?  I saw someone else mention maybe using #2 for curing a turkey.  Similar stuff just that #2 is released slowly over time.

    Okay, thanks, I have brined quite a few chickens and turkeys I had just never heard of curing one.  So what is the difference between the instacures and this DQ, and instacure #1 wouldn't work because of the amount of time it sits in the brine?  So #2 could be used?  Sorry for all the questions...

    I have not had to buy casing for some time as i stocked up quite a while back, but i used to buy from sausagemaker.com but i see now that the price has risen quite a bit.  Looks like I will be buying from butcher packer myself as there seems to be nearly $20 difference in price.  Very good...

    I clicked his link and that DQ looks a lot like my instacure #1, I have seen other recipes for doing this and they called for instaure #1.  I'm curious find out the answer.   Martin

    I am quite curious myself, would really like to see the end result.  I'm not very familiar with cure #2 but why would you want to use it in this application?   Wouldn't cure #1 do the job?

    Welcome to the forum, I would also recommend chickens for your first smoke, as they tend to inexpensive so if something goes wrong you don't ruin an expensive piece of meat.  Chickens were my first and we have not had a chicken any other way since.  Good luck and ask questions if you have them...
