    meathunter pretty much sums it up - grind once if you want smaller pieces of meat, grind twice if you want a paste/emulsion. I grind twice for hot dogs, nothing else.

    Smoke residue puts hair on your chest, leave it there. Other than that, I treat it the same as any other oven I cook in - clean up the drippings, spilled rub, etc.

    Grind/Mix or Mix/Grind?

    I grind first, then mix. If I'm going to grind twice, then its grind,mix,grind. Also, I almost always stir the spices into water before mixing into the meat, I think I get a better distribution of spices that way.
