I can't put foil in/on my smoker, now what do I do?

How to know you're a redneck. When you see this: and your first reaction is "Foil those ribs!",then you know you're a redneck like me. :)

Whats a good BBQ or SMOKED sausage to make for an event?

Ahh, the bible. I've learned that his recipes are outstanding, but a bit mild for my taste - I tend to increase the spices about 10% from his recipes now. FYI, I make brats, and I dont emulsify them, I just coarse grind. Yes the texture is different, but nobody I know cares, heck, I dont...

Whats a good BBQ or SMOKED sausage to make for an event?

Mike, breakfast or lunch or dinner? If breakfast I'd go with a standard breakfast link. Lunch I'd do Polish, maybe with half with cheese in them as a +50cent option? (it is a fund raiser, right? :) Dinner I'd do Italian, serve with peppers & onions on a steak rolls. My reasoning is that I'd keep...

    Stuffed Pork Loin

Ahhhh, stuffed pork loin - you're in for a treat. Tips I'll throw in: - do NOT overcook it ! - I dont usually butterfly loins. If I'm not putting a lot in there (like just cheese & jalepenos) I stick a long filet knife in the end and open up a channel to stuff stuff in. Sometimes I core them...

Chip Pan catches fire on home built propane smoker - need a bit of help please.

I also use an old cast iron frying pan for my wood - dust always burns for me. Chips burn at higher temps, smolder at low temps. Chunks smolder, but above 250-275 they will begin to burn for me too. Wrapping the chunks in a layer or 2 of heavy duty foil will prevent it from getting oxygen...

    Pressure canner question

In principle I agree with Dave, better safe than sorry, and yes I've tossed a few things I didnt think were prepared properly (including a few canned items). But in practice, if we always followed that advice we'd starve to death! In this case you had these beans at the desired temp for the...

    Soda Can Alcohol Stove

I've used a soda can stove for many years, perfect for heating a can of soup/stew & a hot cup of coffee for lunch while deer hunting. Those little suckers put out a LOT of heat, I'm sure it would work very well to start up the chimney, good idea! Denatured alcohol is excellent and tends to be...

    meat cooking to fast

Nice looking smoker, but I dont know the answer to your question.  If the smoker temp where the meat is remains in the 225-245 range, the best uninformed guess I can venture is maybe you are using smaller pieces of meat??

    Chuck Roast question

I rub with an envelope of italian dressing mix, cook low & slow to 205, definitely rest for an hour, pull/shred it.  Fantastic on hoagie rolls with cheese & maybe some peppers/onions or pickled veggies. Be sure to retain the drippings for dipping, sloppy sandwiches are the best! (yes I got that...

    The July Throwdown winners are....................

This was the hardest throwdown to vote on so far, SO many good entries... which means extra kudos to the winners, well done!  Not to leave the rest of the entries out, they were all awesome; but here are a few things that really caught my attention this round: -- Mmundy81, nice biscuit!! ...

Wanted 2 Butts Ended up with 2 Shoulders.

good luck to ya -- if you're shooting for better than "the best we ever had", you're going to need it!! (Picnics/shoulders are just butts with more of the shoulder meat & bone still attached, they make great PP... but I suspect you already know that!) Sounds to me like you're going to be...

Fish Smoking Share - So Far, Worked Great With Salmon, Striped Bass and Bluefish

That sounds pretty good. My boys brought home some bluefish last weekend from the Jersey shore (its in the freezer now), I dont care for bluefish but I've never smoked it so I think I'll give your brine recipe a try, it does sound good.  Thanks for posting it!

Help me get off the fence and buy a smoker

There are ways to minimize the tinkering, but there is no way around the fact that you are currently depriving your family of healthy wholesome delicious smoked meat. You  don't want to be labeled as one of those dads... so get off the fence and buy a smoker! There, how's that?  :)

4th of July Throwdown Voting Thread.

oh, man, THIS is why I dont enter the throwdowns... wow!  There are a half dozen I want to try, where do I place my order? OK, if I can really only vote for one... I've got it narrowed down to 2... ok, vote registered.  Not fair to the others though. I'm taking notes, there are 3 I'm going to...

    Jerky Newb

Eric's comments were good. IMO, but I wouldnt roll with it... 225 will cook the meat, not dry it.  I too have never seen/used oil with jerky. Otherwise it sounds good, I might try it myself!
