    Butcher's Twine/String

I love the "cooking rubber bands," I think they're made out of silicone. You can probably find them in the grocery store.

    Breast up or down

OK, I'm confused - you guys keep saying breast up, but if its spatchcocked does that mean the skin side up or down??? bones down would mean skin up, right?

    Grinders

I do 2 or 3 or 4 deer per year, plus a moose/elk or a couple caribou every other year. Started out with a hand crank grinder. Tough to crank when its not bolted down, and tough to feed & crank by myself. Also tried the grinder attachment for the kitchenaid - it works good, but very slow to do...

    40-140-4 VS Final Temp

Jeez, toxins. Just one more thing I didnt know. Searching on "bacterial toxins in food" provided some enlightening reading, thanks. Nothing's as simple as it was when we were kids and cooked unrefrigerated meat on hot rocks, is it? Sure do miss that youthful ignorance. Thanks for your responses.

    40-140-4 VS Final Temp

OK, I'll throw some ignorance out there for public display: I understand the 40-140* within 4 hours rule. Problem is, all the info I'm finding says that getting the final temp up to 185 (for a whole turkey) is what kills the bugs, betty crocker (et al) doesnt say anything about how fast you...

Smoking 20lbs Turkey - Yay or Nay?

Yep. We've been cooking two or three 20-24 lb turkeys every thanksgiving and xmas for several generations, yes, a 20 lb turkey fits in the oven and the smoker.

    Rookie mistake... horrible bitter aftertaste

Me - I'd thin blue smoke the first 3 hours and thats all. Me, I'd thin blue smoke for 2 hours, but if it was still smoking for the full 3 I wouldnt worry about it. (But 3 hours, wow, I usually do 16-20 lb birds, & it takes me 8-10 hours, of which I smoke 4-5 hours.) As the others said - TBS...

    Something Different

Used to bowhunt for catfish when I was a kid. Brought along a small jar of olive oil, heavy duty tinfoil & matches, cook 'em up over a small campfire... heaven on earth. Sorry folks, but there's one meal that is better than smoked meat! thanks for dredging up a good memory!

Is it wrong to bring Blackberry deer hunting?

    Wrong? nope. Obsessed? maybe. :)

    Rookie mistake... horrible bitter aftertaste

Yep, way too much smoke! I like to see barely any smoke, and only for the first half to 3/4 of the cooking. Around these parts we refer to it as TBS -Thin Blue Smoke. Keep the vent completely open while smoking. Use less wood, less often. And yes, I made the same mistake on a ham many moons...

    Propane -vs- Electric

I have both. Started with a propane ECB about 25 years ago. Added an electric a couple years ago so I could control temps better (built a PID for it), do lower temp smoking... and fit more in it, specifically jerky was a pain in the ECB because I could only do small batches. Also I used to do...

    Seeking Feedback

Well Mr Fatback Joe, looks great, you can cook for me any time! I dont know squat about presentation, never competed, dont care to, dont have a clue what judges look for. Probably couldnt ever win even if I tried. But that seems to be what youre looking for, so I'll comment. Take it for what...

What are you smoking this Thanksgiving

Feasting with about 25 at my house thanksgiving. Roasting a stuffed turkey or two in the oven for the big meal at noon... For supper in the evening, we're smokin: brined turkey, sliced for sandwiches pastrami for sandwiches burnt ends mmm-oink balls maybe some mac&cheese maybe something else...

    Trouble with Smoke

I toss in a few briquettes and a wood chunk. Keeps the wood smoldering, and the briquettes make me feel better about using an electric

    Huge multiple pictures in signature

I like the pics in your sig lines, I do not want to see them go away. But I have to admit, some of the big ones fill the entire screen on my laptop, all the scrolling can be annoying at times, especially when its the same one over and over and over in the same thread. Not complaining mind you...

    Larger Load = More Time?

Raceyb, I like the simple way you expressed that. I freely admit, I'm a rookie, here to learn... which is why I dont post much, so I'm hesitant to disagree, but... My observations are that with my electric smoker, once I have it up to operating temp the amount of meat doesnt have a big effect...
