Gee, I've only done two briskets and everyone I know thinks I'm an expert!!! It's simple. Just pick out a nice packer brisket about 12-13 lbs, put rub on the brisket, sear the brisket all over, put it in a foil pan fat side up, smoke it for 2 hours at about 260*, flip it over and smoke it for...

Packer Brisket, et al, with q-view

I'm like Chris, on the two I have done, I spent a lot of time pulling fat out of the point. I'll definitely give this a try. Thanks!

So I just smoked my 1st brisket...

First, welcome from another newbie. I'll tell you the conclusion I came to after doing almost the same thing you did. I tried my first brisket with my Big Chief. I had to insulate the sides and the top VERY well and could get the internal temp up to 225*. But, part way through the smoke, the...

    Pissed off co-worker :(

MANY times that is the thanks you get when you do something nice. I find it harder and harder to go out of my way for people. Except my good friends of course. It shouldn't be that way, but you just get tired of getting burned.

    Smoke ring in BBQ Meat

I have yet to get a good smoke ring with my GOSM, but everything tastes great so I could care less about the smoke ring.

    Saga of my first Fatty

Wow, this seems way more complicated than what I experienced with my small GOSM. I put 190* water from a hot water dispenser in the water pan. Then I just put the provided wood and water pan in place and preheat the whole unit while I am preparing stuff to go in. Then put 2-3 wood chunks in...

To sear or not to sear, that is the question.

Richtee, maybe you did not see my pictures. This was my first packer. I was a little nervous about the whole process, but can't wait to do it again. http://www.smokingmeatforums.com/for...ead.php?t=7515

    3-2-1 mush?

Debi, have you looked at the loinbacks at Walmart? I think they are $3.99 here, but my CRS might have kicked in so I could be wrong. They have lots of meat and absolutely nothing to throw away except the bone after knawing in clean. Most excellent.

    Brisket PRices

$1.98 per lb here for packers at a local store. I'll check at Walmart next time I am there.

To sear or not to sear, that is the question.

Nope, it's a sealed secret now. Glad I got in on it within the last couple weeks, before it became sealed!!! Actually, read through the stickies in the "beef" section. There is one where SmokyOkie explains the process. I think that is where I learned most. Then I just asked SmokyOkie a...

    GOSM Low Heat Fix (w/pics)

After doing a little reading on the internet, mostly what I found was that the white is not rated for gas and the yellow is. But, I didn't find anything that said that gas would deteriorate the white tape. Was more that the white tape shreds and brakes apart very easy and if a piece gets into...

    First Packer Brisket, Q-View.......

I know putting sauce on it is probably a real head shaker for some (most) of you. Give the northern boy a chance, old habits are hard to break!
