    PigCircles, After I thought about it a little more, I too would think somewhere around 10 minutes for the searing. I really like cooking at the higher temp and therefore reducing the smoker time. Can get up and start at around 5:00 a.m. and can be finished by about 2:00 p.m.

    My youngest daughter (4 y.o.) usually doesn't eat much. She'll eat a couple bites of meat with her meal. I've done 2 packer briskets now and she tears it up and wants more. So do the other 3 kids by the way.
