    Always better safe than sorry, but I remember as a kid my grandmother would take the turkey out of the fridge in the morning and start preparing it and it sat out on the counter all morning until she was ready to put it in the oven.   We NEVER got sick...just sayin. Bill

    And done.... The IT on the legs was way higher than the breasts...I think this one is a bust..... Next year....minimally processed so that I can brine!!!!! Looks good though...a few strips of bacon added across the top when I inserted the probes. He's a beaut! Bill

    Got a 14 pounder for dinner tonight at 4:00. Just getting started. Steph bought a pre injected bird so no brine or other injection. I admit I'm a little nervous that this one wont turn out as good as last year.... Sorry...I tried posting from my phone and all I got was the freakin URLs...
