I have found tri tip at Publix here in South Florida once. It was labled as Sirloin Tri-Tip. The meat dept guy (I don't want to call him a butcher) said that they can order them if they get enough requests.

Freezing at 30 below for 30 days is recomended to kill any paracites etc. on wild hogs or bear, but venison and elk are not usually a problem. I like my beef and venison taken out of the frig. and carried slowly through a hot kitchen.

beautiful job. I smoke one every time Publix or Winn Dixie (the only close stores) has them on sale. There on sale now for $5.47 will pick one up tomorrow.

Wow that looks great. I cook pbellas on the grill frequently but have only smoked them a couple of times. Don't remember what I stuffed them with. Will try this for sure.
