    Tender Quick?

    I've used it for curing hams and bacon. When curing the meats it turns it pink/red. I tried it once on some jerky and didn't like it at all. I'm pretty sure it's salt with salt peter (the nitrates). I've never used it in a rub for smoking.

    It does seem to take some time and work. I have 2 reasons to want to try this. One, just to say I did it. It would be pretty cool to smoke a butt from a hog you raised and smoke with charcoal you made!! Two, lack of quality lump charcoal in this area. Jeff
