What do you all think about moving the stack below the racks? I'm thinking about making my silver a reverse flow - as long as I have to move the stack I would like to get those extra few inches of rack back by moving the stack underneath.

That's just what I wanted to see!!
Now I'll just need to figure dimensions that will allow proper heat flow while leaving room to set a pan of beans under the rack and a butt.

I've been looking for something to make jerky racks too.
I'm not sure why I have it in my head that it's bad. But, is it safe to use aluminum in a smoker? I know I use foil but something got this thought in my head.
I saw some inexpensive aluminum racks the other day but didn't pick them up.
Here's my recipe for shooter jerky. The added liquids help keep it together when shooting. I have dropped the liquid smoke and put in the smoker. The best results I had were smoking for a short period of time with mesquite the finishing in the dehydrator.
