    Brisket question

Didn't cure anything. Yes, I bought the packaged corned beef briskets.I had no idea they were cured. That would make that dramatic of a difference? I thought it was just referring to the flavor pack that came with it. Haha. The whole, I trimmed a little fat, not much. Rubbed in Jeff's rub...

    Brisket question

Ok, I've done a few small 4ish pound 'corned beef' briskets. I just didn't use the flavoring that came with them, instead used Jeff's rub. All were great! I decided to do a whole brisket. It sucked! Same recipe & method. The question.. All the smaller ones I've done have a let's say beef...

    Master built 40" + AMNPS

I've asked Todd, awaiting his response. Was just hoping for user experience. Im not about to hook a mail box to my smoker. Lol. I'd be thrilled with something that'd give me 5 or 6 hours of continuous hot or cold smoke.

    Master built 40" + AMNPS

I've searched around, and find that the amnps doesn't do well with propane smokers, but mostly all the posts pertaining to smaller units. The question. Anybody using these two together during hot smoking with success? Maybe, the 40" version has enough space it won't run out of o2? And stay...

Are there better smokers than the masterbuilts...in reason. $$

I'm with Todd! Got a masterbuilt xl propane Smoker. $200, cast pan $8. Doors seal well enough. Wind bock, old 2x8s I had laying around, and soon, a cover $20. 1000 times better than my old smoker MB 7in1. I haven't looked back.

    digital Remote Themometers

Through my research, I ordered the Maverick 732 and a thermworks 600, I think that's what it was called. I haven't used them yet, but most the reviews seem great. Always recommended around here (732). I don't own any "iStuff" so never looked at them.

New and first try with Chicken

too hot and fast. Try 250ish to start. Last half hour or so, bump it to 300 for crispy skin. Also, chicken only needs to go to 165 IT.

    Meat falls apart

You make it sound easy! I try very hard to accomplish this. :D You can smoke it to a lower IT, or use Butcher netting/string if you like how you make it.

I've been using alot of cherry lately. I like it's sweetness, and the color effect it gives. I'm still new and not very experienced in all this though.

First Smoked Turkey for Christmas Dinner

I replied to you in another thread. But, I smoked Turkey yesterday also. 15lbs, it stalled out @160 for almost 2 hours. I bumped it up to about 350 for a hour, cause it was getting dinner time. Worked out fine.

Early Christmas present - UPDATED WITH Q-View.

Congrats on the XL! Mine should be here Monday, just upgraded from a MB 7-1. I'm new to this to, but when I seasoned my smoker, I just covered all the inside surfaces in Pam. Ran it at around 350 for about 2 hours. Wiped the excess off after it had cooled and called it good. 2: I smoked...
