    I've got a question to ask the experts; Living in the Deep South as I do, ( South Mississippi ) we have 2 types of Oak trees Red Oak and Water Oak. My question is are they any good for smoking in my SFB?

    I've got a shot at some FREE Maple and Pecan, but both trees have Black hollowed out cores in the center of their trunks. If I leave this section alone is the rest of the wood ok for smoking?

    I've been looking at the convection plates Horizon Smokershas for sale for my smoker. They are 1/4" steel, My question for you experts is; Would Stainless Steel work just as good for the convection plate? I have access to a piece of stainless that I could get cut to fit?

    NOBOUNDRIES, That is good to know, so 30 degrees either way I'm ok during the smoke. That alone reduces the frustration level by 50 points. THANKS!!!

    Guys, I have an Oklahoma Joe, off set, have sealed around fire box with High Temp calk, got new thermometer, get temp up to cooking and once it starts dropping Iopen fire box to get more air flow, still dropping, I add a chunk of wood, 15 or so later I'm 30 degrees over cook temp.     Mick, I've got an older Ok Joe and have found a site called Horizon Smokers, they sell convection plates which are 3/16 thick steel to keep heat even through out the chamber, works well. By the way I'm also retired AF, only good thing Clinton did was let me retire. Have a good one.
