I too can attest to some resting time before serving. I smoked some for Thanksgiving and the night I did them the flavor was lacking served them the next day and a whole load of taste.
Guys I have been wondering can you use aluminum screening for windows as grill mats? I don't see why not other than the machine oil contamination, but if you cook that off would it then be ok? Any thoughts?
Jack I am using a masterbuilt 40" propane. My fault let other things distract me and I paid the price. Oldschool thanks my butts and nuts were a big hit.

Thanks bertman. I used your advice on draping the bacon. Before I shut the door I spritzed it with apple juice. Used the apple/pecan mix of wood. The roast cooked in 2 hrs.
So we just got done with dinner and it was awesome. Plated it with some loaded baked potato balls and green beans(absent from photo). Thank you all for the help and suggestions.
