Good looking food! You should be able to tweak the lid with a C clamp and a 2 x 4, do it in small steps moving the clamp often. Sorry for the crude drawing, I did it in paint

Try a pork butt, I did one as my first meat smoke and it came out awesome, follow the directions in some of the other threads on here, I went with the foil at 160 deg then took it out at 200 deg and put it in a cooler wrapped in a towel for about an hour. The total time I think was about 10...
After searching it seems that USDA recommends 145 deg, I did find one place that said 160 deg if cooking for infants
