qukck question, anyone think that putting my probe thru a block of hickory is a problem? only wood i could find quickly and i drilled it out before putting the birds on
altho i did some ribs on the ECB the other week, and they were pretty good, just sucked having to babysit the fire for 4 1/2 hours...altho that might partially be because of the lump, im using kingsford now and the lump is for the pit
you are right, i am surprised how well it performs (compared to the ECB), i got the vents at about 15% for 2 and 20% for one, and it is hovering at about 235 for the past hour
did my first smoke today (some ribs, sorry no pics) on my ECB (only mod is drilled holes in the firepan), it wasnt as bad as i thought...altho i had to babysit the temp for the 4 1/2 hours, hope my new WSM (that arrives on tuesday) is alot easier lol

well after reading so many good things about the WSM, i went and ordered an 18.5 one...hopefully its here soon
what are the must do mods (if any) to these things...also do they need to be seasoned too?
thanks for the info, i think i will just get the side firefox since i already own the chargriller, and go from there, worst come to worst i am out 50 bucks instead of 200+ for the WSM. Which mods would you recommend on the chargriller?
I would love to get into smoking, since i LOVE grilling. Well i currently use a chargriller (pro model i think), and there is the available side fire box you can buy for it...my question is, would it be a decent smoker if i added that, or do i have to spring 200 for the WSM?
