I too am the crazy smoker.
The two questions I'm asked every week are "what are you smoking this weekend" and "when are you gonna bring some more food in?"
Man, I am never smoking in a hurry again.
it is colder and very windy tonight so i had to turn my gasser up a little but it still settled in at 230 for the first hour. so i didnt get a chance to check till 3 hours in when i was gonna spritz. low and behold its not windy or as cold and my smoker...
Ok, so i rubbed my pork shoulder and brisket packer and was in a very big hurry. i have a smaller smoker and didn't think about the brisket size till i went to put it in. well, it doesn't fit. in too big of a hurry to trim properly and separate the point especially since it already has mustard...

Also, I don't know about this guy on the corner stuff, I walk to my back yard and pick it. Along with strawberrys early in the year, squash, cucumbers, watermelon, tomatoes, and jap peppers.
A little fill in. I cooked the ribs in the smoker at 225 for 2 hours then wrapped in the oven at 225 for 2 hours. Added some cattlemans and cooked uncovered for 30 minutes. A little too falling off the bone for me. But tasted great.
The butt I smoked till 160 then in the oven wrapped till 200...
