    How Many Mes Owners Here?

Hi Robb - I use nothing but Traeger pellets in my MES - but never in the chip pan - always in my 5x8 AMAZN-PS.  Works great.

1st propane smoke - immediate problem!

I only did chips once in my MES, and after that (since I wanted to be able to cold smoke too) got a 5x8 AMNPS and haven't had to worry about watching/switching to keep TBS rolling.   That said, I got about an hour out of soaked chips in mine, so 10 minutes sounds really quick to me.  How long...

    Great Smoke from the Masterbuilt

I've never had a problem keeping the AMNPS going - I put the tray on top of the sheet metal chip box, pull out the chip loader tube an inch or two, and run w/the vent wide open.  I give it 45 seconds of torch and let it flame for 10 minutes before blowing it out and putting it in the MES...

    Weekend Smoke

Completely agree!  I'm doing a small batch today in balmy MN - 52F and sunny (even with 95% snow cover - melt, please melt!!).  With the AMPS, a tray of ice right over the pellets, a gallon bottle of ice above that, and an umbrella to keep direct sun off the smoker, I'm rolling TBS at 60* IT.

It's going to get warm soon, so cheese season is getting ready to close.

Looks great!  I'm doing 6.5 lbs of "bonus" Mozz today - I know a guy who owns a restaurant, and have been telling him about the new smoker.  He bought a 6.5 lb block and said "smoke it and keep half."  It's also nice that he gets his at roughly half what I can buy it for retail.  Pretty good...

Rainy day turkey smoke / QView

Not my favorite way to smoke, but we reverse planned on doing a turkey today (13 lbs - thawed in the fridge for 2.5 days, brined for 18 hours) so today was the day.  The brine I used was: 2 gal water 1 1/2 cups canning salt 1/3 cup brown sugar 1/4 cup Worcestershire 3 TBSP minced garlic 1...

    First Breakfast Fattie/3rd AMPNS test

Cool - I'd def try pulling out the tube a bit - I pull it just to where the chip drawer (ie opening) starts and it has worked well. I also put that side of the MES away from the wind if it's a breezy day. Also - not sure how humid it is at your place but I keep my pellets in a cooler w/the lid...

    First Breakfast Fattie/3rd AMPNS test

Looks great! WRT your AMNPS - what kind of venting did you give it? I have an MES and pull out the chip tube a few inches, and then go with full open vent - I haven't had mine go out. Even smoking in cold weather (say, 10* F) the smoker keeps temp just fine...

Perfect MN day for a cold cheese smoke

Thanks gents!   It helps that I have to fly out tomorrow and won't be able to even look at 'em for a week.  Then only 3 to go, right? :)
