Welcome aboard!!! well i have the master forge smoker and with a few mods the smoker works really well for that price!! Ive done mostly everything you can think of on it and it performs like a champ.
I always pump before. but if you leave it in the brine for 4 weeks its really not necessary. pumping helps speed up the curing process. but in any case i like to inject the cure around the bone just to be on the safe side.
I think 24 hours for a ham is to little time for brine/curing a ham. i usually keep it the cure for at least 2 weeks that's if am short on time for a better ham 3-4 weeks works for a moist better tasting ham.
+1 these guys have great prices i bought my pink salt cure#1 from they had the best price on the whole net. now i got enough pink salt to last me for a couple of years!!!
I just want to give a huge thanks to everyone that makes this possible. i have been looking to get a A-Maze-N Pellet Smoker but didn't have the funds since i lost my job and have been able to find one. now i got my xmas gift and i can cold smoke also damn that put me in a good mood!!!
Nice setup my brew rig is ghetto but it gets the job done!!! i am going to brew a APA in the next few days i have done one in awhile. Man its going to be a few months before you can taste that barleywine but i bet its going to be good. i myself have been wanting to brew one but i want to wait...
