    1st Brisket

OK, so I did have the sides named backwards. This article on Deejay's site is what I found confusing: Always check temperature of the smoked brisket in the FLAT, not the point. The point will usually become tender before the flat, it’s thinner! Don’t be fooled by checking the wrong end...

    1st Brisket

A local store had whole beef brisket for 1.88/lb, so I picked on up. They were all pretty much the same size and the one I got was a little over 13 lbs. There is a thicker side and a thinner side to it. From what I under, the thicker side is called the "flat" and the thinner side is called the...

    question for vert. smokers

I think Poultry is your only concern of where it goes. Not quite sure why that is, but everyone says it needs to go under all other meats. I never really understood why that is though... Anyway, It's what I do because I read it here and fugure it MUST be right... MoFo

    How long should smoke last?

nomorecoop - Thanks for that info. That is what I was really fishing for... I buy my wood at ACE Hdwe. and chunks run from 2x2 up to maybe 4x 2 inches. I ususally will put 1 of the big ones or a couple of the smaller chunks in at a time and will get at the most maybe 1 hour of smoke. I use the...

    How long should smoke last?

Reading this thread is kind of confusing me... Are some of you GOSM users actually filling your cast iron wood box with wood, or do you just put in a fist sized chunk or two?

    GOSM Mod

It looks as though you are using galvanized pipe instead of black pipe for your nipple. The galvanized material can flake off and plug up your orfice, which could cause problems. If I were you, I would replace the galvanized piece with black pipe.

    Black powder

Not wanting to disassemble anything, I blew out the burner and tube best I could with my air compressor and it certainly seemed to have helped! Now I got the blue flame with yellow tip. Thanks to all for the great help!

    Black powder

Well, the slide piece goes around an area of the tube that is covered with a small mesh screen. Unfortunately, adjusting the slide from completely covering the screened area to not at all covering the screened area does not seem to make any difference in the flame. It always has long yellow...

    Black powder

Hey Dutch - I did find that there is a small screw where the propane enters the burner that allows a collar to turn around an air vent. I am going to play with this a bit and see if I can make any adjustments in the air flow.
