    Looks good! I'm a noob, so please excuse my ignorance. If you are going to eat the chops right away, why would you cure with TQ? Seems like you could just use salt and sugar and avoid the nasty nitrates and nitrites.

    I did mine on a thin flexible cutting board, but it still stuck and was hard to roll up. I did manage it, but they weren't pretty. Next time I am going to try doing it on saran wrap. Should be easy to roll up and not to hard to remove. Report back if you try it.

    I did my fatties directly on the grate and meatloaf in a foil lined pizza pan with holes in the bottom. The fatties weren't too bad to roll off a cookie sheet onto the grate, but the meatloaf would be a problem, so I would definitely do the meatloaf in some sort of pan with holes in it...

    Yeah, searching for 'hams' rather than 'ham' turns up 261 results for me. But if you look at the titles of those results or even in the posts a lot of them include 'ham', seems like some should show up when just searching for 'ham'. I am just looking for info on curing and smoking hams.

    I've seen boiled, scrambled and raw eggs used in fatties on here. What's the best way? Do the raw eggs cook through? I kind of like the idea of using the raw eggs, but I don't want food poisoning.

    I just recently got into smoking. I bought a WSM about month ago and have been smoking every weekend since. I wanted to get a smoker for a long time and was looking at those side box units, but then I discovered the WSM and changed my mind. So far, no regrets.
