    I found this charcoal at a local grocerie store at the checkout I only saw it the one time it was 7$ a bag and I bought all three they had, I`ve never seen it again the manager of the store told me it was back ordered. it`s great keeps a good temp for a longtime. but I do most of my smoking...

    I use only a little of the steak spice, `the main rub is mostly the chicken spice, which is about 90% paperika I think

    well I`m using oak to start my coal bed, gunna use some Sugar Maple charcoal I`m trying out, and my main fuel for the day is good old Apple wood

    well the baby backs are ready togo, I`m gunna fire up the smoker around 10 am , should be ready for the meat by 10:30 or so. I`m planning on taking the meat off around 2:30 or so for it to rest an hour before eating oh ya and the next door neighbour is bringing over some home made sausage

    18 lbs is a big bird for smoking, be carefull, and remember that low and slow does not help with poultry. cook it at around 325 to 350 so as to get it past the danger zone faster. good luck and keep us posted

    o.k. first , you will never burn off all the zinc unless you cook it red hot for a couple hours, and while burning it if you breath the smoke in and start to feel sick, drink milk it's the best fast cure for zinc poisoning. I've been doing the first aid at the scrap metal yard were I work for...

    I've been using Maple leaf hardwood lump for a couple of years now. only place I've been able to find it is at Home Depot, and it's usualy aroung 15$ for an 18 klg bag it burns very well and not much ash I usualy only clean out the ash during a smoke every 2 hours or so
