    I take my bird out of brine, rinse it off and dry well by patting down and sit in front of fan for half hour. I then rub the bird down with EVOO, then hit with a little rub and then on the pit.

    All great looking stuff (except for last pic....yikes!!!). I did a pork loin a few days ago, and it was banging. Congrats on you past successes, and good luck with your next smoke. Hope to see some great pics.

    How long to smoke a brisket

    I know I'm late on this one but I go hot and fast. I keep my pit around the 300 degree range. Done in about 30-40 min per lb. 2 hr rest.

    Thanks so much Disco and David!!! It's 230 pm so I'm not sure if this qualifies for a late lunch or early dinner, but I had to try it. It is so tasty and juicy, and so tender that I was able to cut through my piece with a fork.
