I saw the smoke blowing thing Debi is talking about on the Home Depot website the other day while looking for a new grill. It seems like a great idea if you can get your hands on an old fridge - hook it up and instant huge smoker... now how...
I agree with Chris - when I started reading this forum I was totally confused about the fatty. I thought I was on the wrong forum for a minute until I saw what they were all about.
And now, I am a Fatty Head... In my opinion, a Fatty is one of the best darned things you will ever eat... mostly...
That's perfect timing! What'd you think of that Sweet Baby Rays, twistertail? I tried it for the first time a few weeks ago. I thought it was pretty good.

Absolutely! There's a wealth of great people on this board and they share what they can. Since I've been here only a short time I'll just say welcome and that I've found solutions to the problems I was having right away here. I'm up in Rochester -

Definitely some good looking grub! I tried my first fattys on a couple of guests too. I'm hooked!
I read the trouble with them falling apart too. What I came up with is to use seran wrap in the process. I cut the fatty in half and roll out both halves between seran wrap. Then I put the...
Wow! Boones Farm? How does that actually turn out flavorwise? I know there's a lot of sugar in that stuff... Seriously - I'd really like to know how this turns out. They look good!

Believe it or not Lawry's Steak & Chop marinade is also pretty darned good. I haven't tried Andria's but the website is nice - looks like there's some tasty recipes on there.

I've tried that Goya Mojo marinade on pork, beef AND chicken. It's pretty delicious and not too pricey - 2 packs at BJ's for about $5.
But if you just want something quick and easy -
1 Cup EVOO
1/4 cup lemon juice (or lime whichever you prefer)
3 tbsps (roughly) fresh chopped cilantro
1 tbsp...
Saturday night at dinner we had the Motts apple sauce out and I spotted the following Apple Mustard Rib Glaze recipe:
2 Cups Mott's apple sauce
1/2 cup spicy brown or dijon mustard
1/4 cup honey
1 tsp crumbled dried thyme
Combine apple sauce, mustard, honey & thyme in blender & whirl until...
Thanks for the tip on the probe location, Watery Eyes. I figured it would be the other way around...
And yes, gypsyseagod, I am addicted to the fatty now! I forgot to mention in the OP that I tried out Crazyhorse's SC Mustard sauce too. That is very tasty!

I use these a lot on my grill. I let them soak for 4 - 6 hours and coat with a little evoo under the fish. I crank 1 burner up high and put the planks over the other burner set at the lowest setting. I usually sprinkle the fish with some fresh cracked pepper and kosher salt. I haven't timed...
