    I haven't had a wsm personally, but I'd consider that on the top of my list. If you want to go offset without breaking the bank, the char griller smokin pro worked well for me for several years. I have a review and several mod threads for that unit if you look at my profile.

    The sear marks were pretty good, still getting used to having to try harder for a good sear vs cooking with propane. Posted up with hash brown casserole. Everyone was happy. Mama thought it was a bit too smoky, might just do a half hour next time

    In about 20 minutes I'll be firing up the grill. I plan to smoke them for about an hour at 180 then pull for long enough to max out the grill and finish them on the searing plates. Q view will be coming.

    I was able to break it in last night. I went with some round steak. Round steak is easy on the ego. If it goes well you can tell yourself how skilled you are getting good quality out of a tough cut like that. If it goes poorly, it's not your fault, what can you expect it's round steak! The...
