    Four little hams for Thanksgiving

Man those look really good! I just got an injector and can't wait to try some hams. I have never seen picnics that small, I'll look at the Smart and Final in Phoenix to see they have any. BTW, thesausagemaker.com is offering free shipping on stuff, they've got really good quality items. I too...

Considering a mod for the Brinkman Vertical Smoker

I too need to weigh in: I used a 4' deep stainless steel 1/2 pan and lid from a restaurant supply ( $4.00 used) and drilled 6 -1" holes in the lid with a hole saw. lip of pan fits right in the wire rack holders and it's been a dream. full pan smokes over 4 hours and I just dump out the ash.  I...

Meatzapalooza Chili, Dino Eggs, Japs and Ribs Q-View

Sqwib, Mine are not in least bit sour. I tried cutting down on the sugar in the original recipe in a batch, and they were a bit sour, but if you keep the sugar content up, they are not  sour at all. At least to my taste. The other thing I added to my recipe is Shriracha hot sauce (an equal...

    ABT's... or ACP's?

Hey Jimmy, yeah, I agree. I think though, that keeping them in the smoker for as long as you need to beats up these particular chiles. Clearly more experimentation on my part is in order!

Meatzapalooza Chili, Dino Eggs, Japs and Ribs Q-View

Thats funny. I LOVE those things, I found that its about the easiest egg salad to make in the world. Just add mayo. As far as deviling, I think they are too seasoned to add any more than something bland like mayo or marscapone to. I can't make them last any more than a couple of months before...

Meatzapalooza Chili, Dino Eggs, Japs and Ribs Q-View

Sqwib, Love this post, I fell in love with the Dino eggs at first sight, and really cottoned to the idea of the deviled dino eggs... and then I started thinking... I make Amish eggs that come out tasting more like deviled eggs than pickled eggs that would be perfect for this application. Heres...

    ABT's... or ACP's?

As I think about it, I also think that wrapping them will keep the chiles themselves a little plumper. They got rendered down pretty well. The chile flavor was very present, but the texture could have been better... of course the name would have to go away, and THATS a pity!

    ABT's... or ACP's?

Thanks all, I am all about the ABT now, although I'll still probably stick with the ACP format. I had one left over that I had for breakfast wrapped in a tortilla with a scrambled egg on top... funny thing about these Hatch chiles...never know when you're going to get a really hot one...Ouch...

    ABT's... or ACP's?

I have looking at ABT's with great interest since I have been on this site. Being a good New Mexican boy, I am not crazy about jalapenos, and am more partial to New Mexican Green chile when it come available in the fall (like now!). Since there seems to be no right or wrong ingredient list, I...
