    Primarily Hickory. Since visiting Pecan Lodge I have been using a lot of Pecan. It leave a sweet smokey flavor.

    Just watched Man Vs Food and they did pork ribs with lot of brown sugar, I have MES30 want to try it

    I have not seen that episode. But keep the your heat down around 225 and you can put as much sugar as you want. For some reason (many drinks) :) I cant recall the high temp at the moment.

    Incredible ribs and chuck roast burnt ends from my UDS today.

    Looks real nice! I made pork belly burnt ends, pig shots, abt's, and smoked shrimp today. Like usual I don't think to take pics until after everything is eaten and cleaned up. Yeah I know the meal didn't really go together. But it was good. :)

    Welcome from Cleveland. If you like charcoal I would recommend a Weber Smokey Mountain. I have 22.5 and once dialed in you can leave it alone for 14 to 16 hours on a load of charcoal.
